Subway appoints new country director of UK and Ireland

Subway is pleased to announce the appointment of a new Country Director for the UK and Ireland. Colin Hughes, formerly of Wyevale Garden Centres, Marks & Spencer UK & Ireland, Pret A Manger and EAT, started the role of country director on the 18 June.

Hughes: new role

Hughes has been brought on-board to drive business growth within the UK and Ireland. With several newly designed Fresh Forward locations already operating in the UK and more in the pipeline, Hughes will lead the ongoing activation of the brand’s global brand revitalisation and growth plans to increase the number of locally owned and operated Subway stores in the UK and Ireland to 3,000 by 2020.

Hughes brings a wealth of experience having worked in the retail and food industry for over 25 years. He previously held numerous executive retail roles for Wyevale Garden Centres including leading the 145 restaurants across four different concepts both company-owned and franchised. In his role as Retail Operations Director at both Pret A Manger and EAT, Hughes was responsible for the site search, acquisition and opening of over 150 new restaurants throughout the UK including many in non-traditional locations, as well as working closely with franchisees.

Most recently Hughes worked as an independent consultant, providing interim operational and commercial cover as well as due diligence support to a range of businesses and private equity clients, needing help to not just grow but also transform their businesses, including a UK and Ireland master franchisee for a global drinks brand.
